Megan Gordon is a cookbook author (well, one book anyway) who wrote Whole Grain Mornings featuring a good deal of recipes for your AM moments; granolas, grain mixes, how-tos, and suggestions. At the where she occasionally writes, she came up with this simple idea.

1/2 cup yogurt
1/4 cup cream
1 apple cut into small pieces
1/2 cup walnuts toasted and chopped

Mix the yogurt and the cream with you’re favorite sweetener and whip it till slightly aerated. Put into two serving bowls. Sautée apples in a tablespoon of butter for several minutes until softened. Add cinnamon and sugar if inclined (no extra sugar for me). Note that any nuts or fruit could work…pears, pecans. Be the boss of your kitchen!

Garnish yogurt mixture with apples and walnuts. Eat. Enough for two servings.

Can’t get much easier than that, though my wife cautioned that she still might have a bagel later than morning. Hey!
