Dem Grilled Peaches

Seems like a lot of stuff to pile onto a peach, but this is simple fare and surprisingly tasty for such a quickly contrived dessert.

 

Begin with the sweetest, as nearly ripe (but not quite) fresh peaches and split into halves. Remove the pit and place it in your yard and grow a peach tree. Set your grill on medium heat, or if you’re me and only have a cast iron grill skillet or plancha, use that.

Butter the peach half a bit (if you wish) and place down on the grilling surface. Grill for about five minutes.  Meanwhile, get some fresh ricotta and some simple syrup and add a teaspoon or so to the simple syrup. Mix it into the ricotta and beat it till its creamy.

Place the half of the peach face up on a small plate (you may have to trim off the bottom of the peach a bit to create a flat surface to get it to sit without rolling around) and put the ricotta mixture on the top of the peach half. To make it look more cool and restaurant quality, use a piping bag like a pastry chef and make a nice looking dollop on it.

Sprinkle finely minced, toasted pistachios over the ricotta and serve. Accept all your guests’ accolades and be proud. If you’re sitting home alone, well…enjoy it. Then go make some friends.
