What a lazy day off, given that we have a car to play with. No biking today, just casual drives to shops, occasional parking struggles, and beautiful weather.

In the evening after we went to our storage unit to drop some items off, we went out for burgers at Barney’s and had none. Instead, I had a falafel pita sandwich and wifey had a BLT, and a shared single order of spicy curly fries. And of course…it was too much. We both took home half our sandwiches for our Saturday lunches. Good.

After an evening walk through Berkeley’s Gourmet Ghetto where we walked past the Cheese Board’s Pizza joint (not the greatest pizza I’ve had despite the lengthy lines outside the place…one look at the cardboard containers revealing oil stains from their nearly drinkable pizza, well…), I stopped at Andronico’s for a couple of overpriced items– club soda and mint so that I could make Pimm’s Lemon Mojito for our nitecaps.

Pimm’s No 1 is a gin-derived spirit with a secret infusion of fruits and herbs from a long-held secret recipe. Most commonly one would make a Pimm’s Cup which has some citrus, usually a garnish of an English cucumber, and a sprig if mint and rosemary as the mood might move you.

But I wanted to try a Mojito (never having had one in memory), though with the twist of this famous gin base. Simple enough. Start with half a lemon and a tablespoon of sugar and muddle it to release the juices and oils. Add a few leaves from a few sprigs of mint and muddle those as well, though more gently. Add 3 oz of Pimm’s, ice, and shake for 15-20 seconds. Pour into a chilled Collins glass with ice; top with chilled club soda and garnish with a sprig of mint.

Enjoy…and we did!
