I brought home a big piece of cod fillet, a cucumber, and some walnuts. At home I had an egg, olive oil, a lemon, raisins, salt, and capers. I also had V8 juice, a piece of ginger, Patis, vodka, and siling Labuyo (hot Thai peppers marinated in vinegar), and a packet of Trader Joe’s precooked rice packages.

Pan-Fried Cod in olive oil and a tad of butter and garlic with salt and pepper. Topped with home-made aioli (egg, lemon, salt, garlic, and olive oil all lovingly whisked together slowly in a mortar and pestle), capers, and a splash of lemon.

Cucumbers cut on the half-moon, salted and drained for thirty minutes, then combined with yogurt, raisins, and raw walnuts.

Trader Joe’s prepared jasmine rice. Microwaved. Done.

Bloody Mario cocktail. V-8 low-sodium tomato juice, Patis, lemon juice, grated ginger, vodka, and siling Labuyo juice. Shaken not stirred.

Most fun? Making the aioli sauce in the molcajete mortar and pestle. Dinner was served!
