This pic puts the entire cake in a better light, but the wedge is definitely more attractive than the whole. Even though the two layers of cocoa nib dacquoise and the chocolate chiffon cake were all cooked in the same size of cake pan, they all came out oddly and misshapen. Go figure.

The cake is pretty damn good, and is composed of these layers:
– bottom Dacquoise with cocoa nibs
– chocolate glaze
– mascarpone
– chocolate chiffon cake
– layer of raspberry jam
– mascarpone
– top Dacquoise with cocoa nibs
– chocolate glaze over the entire shebang

Like I said, pretty good. Even though the whole item looked pretty crappy. ‘A’ for flavor, barely passing for presentation.
