Nothing spectacular tonight, but instead of patatas I opted to choose sweet potatoes instead. As I had no onions, a fat shallot worked fine, but first I took a chunk of slab bacon, cut them lardons, and after they were suitably crisped, I cooked the camotes in this rendered fat.

Once the bacon, sweet potatoes, and shallots were cooked, I put it all in the blend of eggs and let it sit for a few minutes, then proceeded to put it in the skillet for the final fry and flip.

Flavor wise, a tortillas de patatas or, in this case, camotes, so it had a sweetness to it, but either way, a nice contrast such as aioli or a romesco sauce wouldn’t be unwelcome in the future (neither available in my larder).
