The recipe called for ‘hearty chard, pancetta, and pecorino cheese’ , so how the Hell did I end up making a Broccoli, Coppa, and Gruyere (with a splash of Grana Padano) Quiche?
Its what I do, partially because I wanted to use what I had on hand, and I couldn’t find the pancetta that I wanted. Plus I was in Safeway and their chard didn’t look so great.

Meanwhile, we need a salad. What do we have? Half a butter lettuce, some cherry tomatoes, half an avocado, and some fresh mozzarella. Oh. Here a a few spring onion bulbs. Sure, why not? Dressing just sherry vinegar, crushed garlic, a sprinkling of salt, and some mustard.
More and more my cooking is getting…creative. I’m not ready to be David Chang with Momofuku, but I’m pushing the envelope. Oh, yes. Stay tuned.
