Dinner had been a simple pizza of romesco sauce, coppa salami, straccino/crescenza cheese, heirloom tomatoes and sliced figs. We shared a beer.

Long about 1030 pm I thought that I had about 10 minutes to throw together a couple of soufflés, so with the valhrona chocolate melting in the double boiler, I separated eggs, mixed whites with some sugar, mixed the melted chocolate with an egg yolk and a bit, combined all into two buttered ramekins with sprinkled powdered sugar, and 15 minutes later, late night decadence.

It’s really easy when you know how.
