Due to my toe burns, cooking hasn’t been foremost on my mind as I slowly hobble(d) my way back to health and full ambulatoriness, but I had a huge pickle in my fridge, enough vinegar, sugar, and mouseshit Thai peppers (prik kee noo), I sliced up the cuke, diced some red onion, and heated till dissolved water, vinegar, and sugar (and a little salt) to make this delightfully spicy cucumber pickle.

Wifey won’t touch them–I asked if she would like to try one, having just eaten one only to find the heat pretty mild. Good thing. The second and third slice proved her sample the exception–whoa! Not so not that it made it uncomfortable, but close enough.
