I love visiting ethnic grocery stores. Yesterday I was at Koreana Plaza down on Telegraph in downtown Oakland and resisted buying all those wonderful items…but I noted sockeye salmon frozen there at a very reasonable price…so I to it home, cut it into serving pieces, left most in the freezer, and came up with this recipe.

With a butter and lemon sauce, I put the salmon along with eggplant, small sweet peppers, sweet potatoes, and some green beans, then sprinkled fresh dill and lemon pepper over the whole shebang, and wrapped it all up in aluminum foil for 17 minutes at 475 degrees.

Angela ate hers too quickly.
